  GREEN GARLIC,  GARLIC and
GARLIC SCAPES  

Garlic scapes are the long green shoots that grow from the garlic bulb. They are a fantastic way to add garlicky flavor to your favorite dishes. They're a bit milder than garlic cloves, which makes them the perfect base for pestos, an addition to quiches, or even eaten straight up sauteed with a little salt.

Garlic belongs to the genus Allium and is closely related to the onion, rakkyo (an onion found in Asia), scallion, chive, leek, and shallot. Humans have used garlic for thousands of years, and it was used in Ancient Egypt for both culinary purposes and its health and therapeutic benefits.

Green Garlic, botanically classified as Allium sativum, is a young garlic plant harvested before maturity. Also known as spring garlic or baby garlic, green garlic can be identified by its long, slender green leaves—similar to green onions and spring onions—and, depending on the stage of growth when it was pulled, a tiny undivided bulb near its roots. The latter sometimes has a pink or purple tinge.
