In Eastern Washington, the winter squash season typically begins in late summer and extends through the fall months, typically from August to October. During this time, the squash plants mature and produce ripe fruit ready for harvest.

Winter squash varieties, such as butternut, acorn, spaghetti, and pumpkin, thrive in Eastern Washington's warm and sunny climate. The region's fertile soil and perfect temperatures are the ideal growing conditions for winter squash crops.

Farmers carefully monitor their progress as the squash plants mature, observing fruit size, color, and firmness to determine when they are ready for harvest. Once harvested, the winter squash is typically cured by allowing it to sit in a warm, dry area for a period, which helps to harden the skin and improve storage quality.
